It’s that time again: holiday baking!  I love this time of year because there are SO many great recipes out there and so much joy to bring into the kitchen.  Here are a few of my sure-fire favorites:

 

Cornbread Casserole

 

 

Ingredients

 

1/2 cup butter

2 eggs

8 oz. Daisy Light sour cream (or 1 cup)

8 oz. can cream-style corn

8 oz. whole kernel corn, undrained

8 oz. pkg. Jiffy cornbread mix

 

Method

 

Preheat oven to 350 degrees.

Melt butter and pour into a bowl.  Beat the eggsd and add to butter.  Beat in sour cream, both cans of corn and muffin mix.  Mix thoeoughly.  Put in a greased baking dish.  Bake for one hour.

NOTE: This recipe comes from Gooseberry Patch’s cookbook, A Pinch of This, A Dash of That.  I’ve been making it for about 10 years and it never fails to please.  I can’t find 8oz. cans of whole kernel corn, so I pour in the cream corn first and then use that can to measure out the whole kernel corn.  As with all baking, exact measurements are key.

Eggnog Quick Bread

 

Ingredients

 

2 eggs

1 cup organic sugar

1 cup eggnog (light or full fat)

1/2 cup butter, melted

2 teaspoons rum extract

1 teaspoon vanilla (not extract)

2-1/4 cup all-purpose flour

2 teaspoons baking powder

1/4 teaspoon nutmeg

 

Method

Preheat oven to 350 degrees.

Beat eggs in a large bowl, then add next 5 ingredients, blending well.  Add remaining ingredients and stir until just moist.

 

NOTE: This will make your whole kitchen smell like eggnog!  It’s warm and sweet and perfect for gift-giving!
